SUGAR FREE BROWNIE COOKIES


Just the thought of eating a cookie that is also a brownie makes me happy. Having one that is sugar free makes me even happier.




What I mean is that there are not a lot of ingredients that you need to add to this. This is basically a brownie without the ingredients that normally make a dough rise. Well, kind of.

Sugar Free Brownie Cookies

Ingredients

 3/4 cup. Unsweetened Cocoa- 1 1/4 . cups Flour AP- 1 teaspoon. Salt- 1/4 teaspoon Baking soda- Sugar Free Chocolate Chips- 1 8-10 ounce bag separated. See post for details.
 Butter- one and a half sticks . 2 Eggs- 1 1/4 cup Brown sugar alternative-equivalent to regular brown sugar. You can find brown sugar alternative online here . 1 teaspoon. Vanilla Extract- Optional- chopped nuts

Instructions 

Preheat your oven to 350 and prep your pan for nonstick. I like to use parchment paper or silicon sheets.  In a medium bowl, combine together the flour, salt, baking soda, and unsweetened cocoa. Set this aside.  Now, in a microwave safe bowl or sauce pan, melt together the butter and one half of the chocolate chips.

While the chocolate and butter are melting, in a mixing bowl, stir together the eggs and the brown sugar alternative. Pour the melted butter/chocolate mixture into the mixing bowl with the eggs and chocolate (allow to cool a bit if the chocolate and butter are hot as you do not want to cook the eggs). Stir gently.

Then add the flour mixture to this bowl a bit at a time mixing between additions.  Then add your remaining ingredients and blend this in.

Alternatively, you can place your cookies onto the sheet and then press into the cookies the remaining chocolate chips and optional nuts. 

Bake 8-10 minutes until almost done. Remove from oven and allow to cool a bit on the pan- no longer than 10 minutes.
