SUGAR FREE BANANA MUFFINS


Obviously, bananas are a natural choice which contain nutrients such as potassium as well. However, I like the quasi-sweet and full taste that bananas offer to baked goods. Thus, I like to add a banana for taste.




Almost everyone can agree on warm banana muffins coming out of the oven in the morning. Also, leftover banana muffins make for a great snack as well.


Sugar Free Banana Muffins
 Prep Time 10 mins Cook Time 18 mins Total Time 28 mins   The only sugar in these yummy muffins is the sugar that is naturally in bananaz

 Ingredients 

Flour AP- 1 1/2 cups. Make this lower carb or with a gluten-free flour. Sub in low carb Carbalose or a gluten free flour. Baking Powder- 1 1/2 teaspoon. Baking Soda- 1/2 teaspoon. Salt- 1/2 teaspoon. Bananas- 3 mashed. Sugar Alternative- 3/4 cup equivalent to sugar. Granular works best. Egg- 1. Butter- 1 stick melted. Vanilla Extract- 1 teaspoon.

 Instructions 

Preheat your oven to 325 and prep your muffin pan for nonstick. In a bowl, whisk or sift together your flour, baking powder, baking soda, and salt. Set this aside. Now, in a mixing bowl, blend together the bananas and sugar alternative. Add the dry ingredients from the first bowl to the mixing bowl and gently mix. Then stir in the egg. Finally add the melted butter and the vanilla extract to the bowl. Do not over mix however, make sure that the ingredients are blended. Bake for 15-18 minutes (average sizes muffins) or until a toothpick can come out clean. Allow to cool.
